Orange & Coriander Mini Brioches

Brioche is a sweet yeast bread with a rich taste and a tender crumb. The flavors of orange and coriander in these little gems will brighten your morning!

Ingredients

2 cups bread four

2 teaspoons fast-acting dried yeast

½ teaspoon salt

1 tablespoon superfine sugar

2 teaspoons ground coriander seeds

Zest of one orange

2 tablespoons hot water

2 eggs beaten

¼ cup unsalted butter, melted

1 small egg, beaten (for egg wash)

Directions

Lightly grease two brioche pans (or a 12-cup muffin pan). Sift together the flour, yeast, salt, sugar, ground coriander and orange zest in a large bowl. Make a well in the center; pour in the hot water, eggs and melted butter. Beat until a soft dough forms. Turn out onto a lightly floured surface and knead 5 minutes. Transfer dough to a clean, lightly oiled bowl. Cover with plastic wrap or a tea towel and set in a warm place until doubled in bulk, about an hour.

Knead dough 1 to 2 minutes, then roll into a log. Slice into 12 pieces. Shape slices into balls and place in prepared pans.

Cover the pans with plastic wrap or tea towels and let rise again, until dough nearly reaches to the top of the pan. Brush each piece with beaten egg.

Bake at 425’ for 15 minutes. Dust with sifted superfine sugar, if you wish. Serve hot with butter and honey or jam.
