Hummus is a Middle Eastern traditional appetizer and side dish made from mashed chickpeas, sesame paste (tahini), garlic, olive oil and various herbs and spices, depending on taste preference. This basic recipe makes the classic version. Consider it a blank canvas to experiment with.
2 (15.5-ounce) cans organic garbanzo beans (chickpeas), rinsed and drained
2 cloves garlic
1/2 cup water
1/4 cup tahini
Juice of one lemon
2 tablespoons organic extra-virgin olive oil
3/4 teaspoon salt
1/4 teaspoon black pepper
Place beans and garlic in a food processor; pulse for 30 seconds. Add the water, tahini, lemon juice, olive oil and salt and pepper and pulse until smooth. Transfer to a serving bowl and garnish with a splash of olive oil and smoked paprika, if desired. Serve with warm naan bread or baked pita chips.
