Coconut Oil & Herb Spread

This soft spread is a great alternative to butter. Try it on breads, hot toast, crackers, steamed vegetables – anything you would normally treat to a pat of butter. The choice of herb is up to you. Finely chop a small bunch if using fresh, or use 1 tablespoon (more or less to taste) of dried herb. In either case, let the spread rest in the refrigerator for a few hours before using to allow the flavors to infuse.


½ cup organic, unrefined coconut oil

½ cup organic flax seed oil

Fresh or dried basil, thyme, dill or other herb(s)


Heat the coconut oil over low heat in a saucepan until melted. Remove from heat; add flax seed oil and stir. Stir in herbs. Let cool slightly, then pour into a Pyrex or ceramic bowl. Cover with a small dish (or plastic wrap) and refrigerate until firm. Keeps for 6 months in the refrigerator stored in an airtight container.
