Homemade Honey Mustard

A Mountain Rose Herbs Recipe

There's nothing like homemade mustard to complement your favorite grilled foods, sandwiches, summer salads and dips! Mustard is also very easy to make and economical. Use this recipe as a base with which to experiment with adding a pinch of other aromatic seeds, herbs (rosemary is nice) or spices. After all, variety is the spice of life!

Ingredients

 

6 tablespoons organic yellow mustard seeds
2 tablespoons organic brown mustard seeds
1/3 cup filtered or distilled water
2/3 cup organic apple cider vinegar
1/2 cup local honey
1 1/2 teaspooons fine sea salt

Directions

 

Combine mustard seeds, water and vinegar in a bowl, stirring to make sure the seeds are covered. Cover the bowl and leave out in a safe place to rest at room temperature for three days, giving the bowl a turn once a day to slightly stir up the contents. On the fourth day, pour the mixture into a blender, add the honey and salt and process until smooth. Store the mustard in a sealed jar in the refrigerator. Hint: If using metal lids, place a square of parchment paper or plastic wrap between the jar and lid to prevent corrosion from the vinegar.
