If you're wondering what to do with that bag of frozen cranberries leftover from the holidays and just can't handle yet another loaf of cranberry quick bread, here's an elegant, crowd-pleasing appetizer idea perfect for any occasion. Note that this can be made with dried cranberries as well.
Ingredients
1 wheel of Brie
¼ cup raw, organic honey
1/2 teaspoon fresh rosemary, finely minced
1/2 cup frozen or dried cranberries, (thawed, if frozen)
½ cup toasted walnuts, chopped (optional)
1/2 teaspoon sea salt
Crackers or toasted bread rounds for serving
Directions
Preheat oven to 350' F. Remove the top rind of the wheel of brie and place in a small cast iron skillet, pie plate or other suitable oven-safe dish. Bake 10-15 minutes until softened, but not melted.
Combine honey, rosemary, cranberries, and walnuts (if using) in a bowl. Stir to mix, crushing some of the cranberries (if whole and not dried) with the back of a spoon. Tip: If the honey is too thick to work with, microwave it for a few seconds to thin it a bit.
Remove brie from oven and sprinkle with the salt. Spoon the cranberry mixture over the top and serve with crackers or toasted bread.
